Sprouted Cashews Truffle Salt Cookies

Ingredients:

  • 65g Gretel Sprouted Cashews w/Truffle Salt

  • 65g plain flour

  • 35g icing sugar

  • 1/8 tsp truffle salt/sea salt

  • 1/2 tsp parsley flakes (optional)

  • 2 tbsp truffle oil

  • 1-2 tbsp olive oil (add gradually)

For Toppings:

  • Some Gretel Sprouted Cashews w/Truffle Salt

  • Beaten egg for egg wash

Method:

1. Ground cashew nuts in the chopper, add into a mixing bowl.
2. Mix all the ingredients together except topping & olive oil.
3. Gradually add olive oil until the dough combines into a smooth dough.
4. Shape into 10g balls and place on a lined tray.
5. Top each cookie with cashew nut and egg wash.
6. Bake in preheated oven at 170C for 12-15 mins or till golden brown.
