Sprouted Cashews Truffle Salt Cookies

Ingredients:
65g Gretel Sprouted Cashews w/Truffle Salt
65g plain flour
35g icing sugar
1/8 tsp truffle salt/sea salt
1/2 tsp parsley flakes (optional)
2 tbsp truffle oil
1-2 tbsp olive oil (add gradually)
For Toppings:
Some Gretel Sprouted Cashews w/Truffle Salt
Beaten egg for egg wash
Method:
1. Ground cashew nuts in the chopper, add into a mixing bowl.
2. Mix all the ingredients together except topping & olive oil.
3. Gradually add olive oil until the dough combines into a smooth dough.
4. Shape into 10g balls and place on a lined tray.
5. Top each cookie with cashew nut and egg wash.
6. Bake in preheated oven at 170C for 12-15 mins or till golden brown.
